This high protein breakfast burrito is the perfect easy healthy breakfast meal prep. The pineapple bacon sausage paired with the savory egg whites and the mozzarella make it a delicious breakfast recipe.

Ingredients

Instructions

  1. Slice sausages into medallions and sear in a pan on medium heat.
  2. In another pan, turn heat onto medium low and pour a tablespoon of oil into the pan.
  3. Add the egg whites and seasonings. Slowly stir until eggs are cooked through. There may be some liquid left at the bottom of the pan. If that is the case, you can drain the eggs onto a paper towel, or lift them out with a slotted spoon.
  4. Make sure to warm the tortillas before forming the burritos.
  5. Lay the tortilla flat and place 1/4 eggs, 1/4 sausage medallions, and 1/4 of the cheese in the lower third closest to you.
  6. Fold tortilla in a V-shape over the filling, and using thumbs start to roll tortilla. Once you have gotten over most of the filling use your pinky's to fold the sides of the tortilla in on each side, while continuing to roll it closed. (There is a video below showing this process.)
  7. In a warm pan, place the burrito seam side down for a few minutes to seal. Then you can serve, or wrap in aluminum foil and freeze for 3-4 months.
  8. Enjoy!
