  1. Preheat oven to 350°.
  2. Combine eggs, cottage cheese, soy sauce, and brown sugar in a blend and blend until smooth. (You can also use an immersion blender in a bowl.)
  3. Pour egg mixture into greased muffin pan. (It is better to use a silicone pan. If you must use a metal one, then oil each well thoroughly.)
  4. In each cup add 4-5 pearls of mozzarella and around 10g of soy beans.
  5. Top with green onions if desired.
  6. Bake 30-35 minutes until set in the middle.
  7. Before it cools, run a silicone spatula around the edge of each egg bite to release it from the pan.
  8. Enjoy!
  9. These can be frozen and reheated for 45 seconds to a minute 30 in a microwave for a snack on the go.
