- Cover a small baking sheet with parchment paper.
- Begin by putting the oats, raisins, cinnamon, and nutmeg in a large bowl and tossing together.
- Next put in the peanut butter, maple syrup, and vanilla.
- Combine well with a strong spatula as the mixture gets quite thick.
- Once combined, wet hands and begin to portion out into balls. You can use a cookie or ice cream scoop. Each ball is usually 1 1/2-2 Tablespoons of mix.
- You will probably have to wet your hands a few times to keep the mix from sticking to you.
- Place the Energy Bites on the parchment paper line baking sheet.
- Once finished, put them in the freezer for at least 30 minutes.
Notes
You can substitute the raisins for chocolate chips, nuts, dried fruit, or any number of ideas.
I usually keep these in the freezer and serve from there. The peanut butter and maple syrup keep them soft enough and chewy so they aren't hard to bite into.
They will last in the refrigerator for up to 1 week, and in the freezer for 2-3 months.
