A great week-night quick meal that serves up deep flavor in just one pan.

- Slice chicken breasts in half lengthwise, and season with salt and pepper.
- Heat a large skillet, and put 2 tablespoons oil in. Sear chicken breasts on both sides.
- Add 1 cup chicken broth and top with a lid until cooked through.
- Set cooked chicken aside onto a plate and cover with foil.
- Add 1 tablespoon oil, and sauté all vegetables.
- Prepare vermicelli according to package ingredients.
- In a small bowl combine soy sauce, peanut butter, rice vinegar, and sesame oil.
- Chop chicken into bite sized pieces.
- Add chicken to sauteed vegetables, then pour sauce over, stirring well.
- When everything is fully combined, add vermicelli noodles and stir well.
- Serve with crushed cashews and green onions.
Notes
Soy sauce can be substituted for Coconut Aminos in a 1 to 1 ratio.
Peanut Butter can be substituted for Almond, Cashew, or Sun Butter.
