White Truffle & Parmesan Roasted Potatoes

These roasted potatoes are amazing with the deep truffle flavor complemented perfectly with the bold parmesan and spicy black pepper.

Instructions
- Fill a medium sized pot with water and bring to a boil.
- Add 1 Tbsp Kosher Salt to the water.
- Once water is boiling add potatoes for 15-20 minutes or until a fork pierces easily.
- While potatoes are boiling, turn on oven broiler on high.
- Cover baking sheet with parchment paper.
- Once potatoes are done boiling, place them on baking sheet and smash or cut them open.
- Drizzle white truffle oil on potatoes, along with black pepper, salt, and dried parsley.
- Put potatoes under broiler for 5 minutes.
- When the edges of the potatoes are golden and crispy, cover with parmesan cheese and serve.
