This loaded potato is an easy way to serve a delicious, filling meal, the whole family is sure to enjoy.

- Rinse and prick potato with a fork on all sides
- Bake potato in an oven at 450 degrees for 1 hour, or until a fork is easily pushed into it. You can also steam it in the microwave for 6 minutes, making sure to flip it half way through.
- Season all sides of chicken breast with salt, pepper, and garlic powder.
- Sear in a frying pan or on a grill on both sides for 3-5 minutes on medium heat until it reaches an internal temp of 170 degrees.
- Let chicken rest for 5 minutes to retain moisture, then diced into bite size pieces.
- When potato is finished cooking it, slice it in half and slice it crosswise to open it up.
- Top the potato with chicken, mozzarella, bell pepper, kalamata olives, plain greek yogurt, and green onions.
