This roast is juicy, tender, and tangy. Great to use for sandwiches or with roasted potatoes.
Ingredients
Instructions
- Combine all seasonings into a small cup.
- Pat roast dry, and press seasonings on all sides. Let rest during next step.
- Coat bottom of slow cooker with oil and add onion pieces.
- (If you want to make a one pot meal, add 1 bag of golden or fingerling potatoes on top of onions.)
- Place roast on top of onion. Pour tomatoes on top of roast.
- If roast is thawed, cook on high for 4 hours, or low for 6-8.
- Once it reaches internal temperature of 145 degrees, remove roast from crockpot and let rest for 15 minutes, covered.
- Enjoy!
Notes
If you are nightshade intolerant, remove paprika, chili flakes, and tomatoes. You can use 1/4 cup of apple cider vinegar poured on top of the roast to mimic the acidity of the tomatoes and help tenderize the roast.
