- In a stock pot, cook onion in oil until translucent.
- Add chicken and cook for 5-7 minutes or until just turned white all the way through.
- Add garlic, corn, and tomatoes and cook for 5 minutes more.
- Now add Salsa verde and bone broth. Let simmer for 15 minutes.
- Just before serving, add in diced cilantro and let wilt.
- Can be served with chips and plain greek yogurt to use as sour cream.
Notes
You can also combine all ingredients, except cilantro, in a crockpot and slow cook for 4-6 hours on medium heat. Then add cilantro right before serving.
