This high protein quiche has equal parts salty bacon and cheesy mozzarella, with a flaky crust, making it the perfect make-ahead breakfast.

Instructions
- In a large bowl combine flour and salt.
- Grate chilled butter into flour, and press to combine.
- Slowly add ice water until dough is just sticking together.
- Separate dough into two balls, and wrap with plastic wrap before pressing into a disk. Refrigerate for one hour.
- While dough is chilling, cook bacon in a skillet until crispy.
- In a large bowl, combine milk, egg white, salt, and pepper.
- When bacon is done cooking, drain on paper towel and dice into small pieces.
- Preheat oven to 375 degrees.
- Remove dough from fridge and press into pie pans.
- In each pie pan, sprinkle 1/2 of bacon and mozzarella.
- Divide and pour egg white mixture into each pie pan.
- Bake for 40-50 minutes until crust is golden brown and center is set.
